Directions | Refried Beans: 'Refritos' somehow became 'Refried'! Drain contents of two pinto bean pouches, reserving the broth. In a heavy skillet, fry 1 med chopped onion in 2 Tbsp. oil on med heat for 3-5 min till translucent. Add chopped garlic to your taste then add the beans to the skillet, and mash those with a masher while cooking or 'frying', add reserved broth as needed to get the mashed consistency. Add 1 cup grated cheddar cheese, adjust salt, mix well, remove from heat and cover. Mexican households commonly use bacon fat or lard instead of oil. Vegetable Bean Stew: Put 1 cup diced potatoes, 1 med chopped onion, 2 Tbsp. oil, 2 bay leaves, 1/2 tsp pepper corns, and 1-3 hot red chilies (to your taste) and stir fry on med heat till onions turn translucent. Add 1 Tbsp. all-purpose flour and continue 2 min. Add 1 cup water or a broth of your choice, 10 oz can of diced tomatoes, 1 cup diced carrots, beans and broth from this pouch, 1 tsp salt and bring to boil. Add 2 cups of chopped greens (collards, kale, spinach etc), 1/2 tsp dry thyme, adjust water, cover and simmer for 30 min. Serve with some crusty bread and butter. |
