Directions	Prep time: 10 minutes. Cook time: 10 minutes. Makes 8 (1/2 quesadilla) servings. You will need: 1 pkg. McCormick Seasoning Mix. 2 cups chopped cooked chicken. 2 cups shredded cheddar cheese, divided. 1 cup chopped tomato. 8 flour tortillas (8-inch). Assorted toppings: shredded lettuce, chopped avocado, salsa or sour cream. Directions: 1. Mix chicken, 1 1/2 cups of the cheese, tomato and seasoning mix until well blended. 2. Place 4 of the tortillas on 2 baking sheets. Spread chicken mixture evenly on each tortilla. Top with remaining tortillas. Sprinkle with remaining 1/2 cup cheese. 3. Bake in preheated 400 degrees F oven 5 to 10 minutes or until cheese is melted and tortillas are lightly browned. Cut into wedges to serve. Serve with toppings, if desired. Restaurant-style skillet quesadillas: prepare quesadillas as directed, using all 2 cups shredded cheese in chicken mixture. Cook each quesadilla in 1 tsp. hot oil in large nonstick skillet on medium heat 2 to 3 minutes per side or until lightly browned. Try this twist! Southwest Chicken Nachos: prepare chicken mixture as directed. Arrange 8 oz tortilla chips on 2 lightly greased foil-lined shallow baking pans, overlapping chips as necessary. Top each pan with 1/2 of the chicken mixture and 1 cup shredded cheddar cheese. Bake in preheated 375 degrees F oven 5 minutes or until cheese is melted. Serve with desired toppings. Makes 12 appetizer servings.
