Directions | Keep refrigerated or frozen. Cook thoroughly. Roasting: 1. Preheat oven to 375 degrees F. 2. Place lamb, fat side up, on rack in shallow roasting pan. Season lamb roast with herbs and seasonings, as desired. Do not add water. Do not cover. 3. Roast to desired doneness. For medium rare cook to 145 degrees F, for medium cook to 160 degrees F, for well-done cook to 170 degrees F. 4. Remove from oven; tent with foil and let rest 10 minutes before carving. Grilling: 1. Prepare grill (charcoal or gas) according to manufacturer's directions for medium heat. 2. Season or marinate lamb with herbs or spices, as desired. Place on cooking grid. 3. Grill, turning occasionally until desired doneness. For medium rare cook to 145 degrees F, for medium cook to 160 degrees F, for well-done cook to 170 degrees F. 4. Remove from grill; tent with foil and let rest 10 minutes before carving. |
