Directions	What you'll need: 4 pounds fresh tomatoes, washed, cored and diced. 3 tablespoons balsamic vinegar. 4 one-pint jars. (Sterilized according to manufacturer's instructions). Fresh tomato sauce: Combine tomatoes, vinegar, and spice pack and let rest for 15 minutes before serving. Store in refrigerator. Canning: bring tomatoes, vinegar, and spice pack to a boil in a large saucepan. Reduce heat and simmer for 10 minutes. Fill jars with tomato mixture, leaving 1/2 inch headspace. Seal jars with lids and process in boiling water for 20* minutes making sure to adjust for higher altitudes. Jars should be tightly sealed according to manufacturers directions. Store for up to one year. Serve as bruschetta topping or fresh pasta sauce. *Increase processing time 5 minutes for 1,001 - 6,000 ft., 10 minutes for 6001 ft. or higher.
