Directions | Wood chips. Soak wood chips in water for at least 30 minutes before using. (Wet wood will produce more smoke and more flavor.) Always grill with the lid closed to allow the smoke to fully penetrate the food. For charcoal grills: when coals are covered with white ash and ready to cook, sprinkle a handful of wet wood chips on top of the hot coals. When using a smoker box with a gas grill: before preheating the grill, place wet wood chips in a smoker box and follow the smoker box instructions. When using an aluminum pan with a gas grill: Before preheating the grill, place wet wood chips in the front left-and corner of the grill, underneath the cooking grate. Creating smoke in the grill before placing food on the cooking grate will give the best results. Do not place food directly above the wood chips. For smoker units: Follow the manufacturer's instructions included with your unit. |
