Directions	Quick soak: 1. Sort and rinse beans, boil 6-8 cups of water. 2. Add 1 lb. (2 1/2 cups) of beans, bring it to boil, and then boil for 2 minutes. 3. Remove from heat, cover with lid and let stand for 1 hour. 4. Drain water and rinse beans. Overnight soak: 1. Sort and rinse beans. 2. To 1 lb. (2 1/2 cups) of beans add 6-8 cups water. 3. Let stand overnight or at least 6-8 hours. 4. Drain water and rinse beans. Cooking instructions: 6-8 cups of water. 2 1/2 cups of beans. 1. Bring 6-8 cups of water to boil. 2. Add drained and rinsed beans to the boiling water and reduce heat to simmer. 3. Simmer gently and cover with lid until desired tenderness is reached, about 1 1/2 to 2 hours.
