Directions	Hot Cocoa. In 2-quart saucepan mix 1 1/3 cups instant nonfat dry milk, 3 tablespoons sugar, 3 tablespoons cocoa, and a few grains salt. Gradually stir in 3 cups water. Heat just to boiling, lower heat and cook 3 minutes, stirring constantly. Stir in 1/4 teaspoon vanilla. Serves 4. Whipped Topping. Chill bowl and beater. Whip 1/2 cup instant nonfat dry milk with 1/2 cup ice water until peaks form (2 to 3 minutes). Add 2 tablespoons lemon juice and beat until stiff (1 to 2 minutes more). Fold in 1/4 cup sugar. Serve at once. For interesting fruit flavors use ice-cold fruit juice in place of ice water. Quick Sour Milk. Prepare by adding 1/3 cup of instant nonfat dry milk to 1 cup water. Mix until dissolved. Stir in 1 tablespoon vinegar or lemon juice and let stand about 5 minutes before using. Can be used as an alternative to buttermilk in recipes. Directions.
