Heat the oil in a 4 - qt. saucepan over medium - high heat. Sauté the chicken until cooked though. 2. Stir in the broth, water, tomatoes and soup mix and heat to a boil. Reduce the heat to medium - low and simmer until the beans and rice are tender, about 20 min. Season with the salt. Top with crumbled tortilla chips and fresh cilantro, if desired.
