Directions | YOU WILL NEED: 4 boneless, skinless chicken breasts or 8 boneless, skinless chicken thighs (about 1 ½ lb.) 2 cups potatoes or sweet potatoes peeled and cut in ½ to 1” pieces 2 cups carrots peeled and cut in 1” pieces or 1 pkg. (14 oz.) your favorite frozen vegetables 1. HEAT oven to 400°F. 2. PLACE chicken into 13x9x2” baking dish. Arrange potatoes and carrots around chicken.
