Directions | Keeps best refrigerated or frozen. Cooking Instructions: 1 Package scottish oatmeal scone mix. 3/4 Cup water. 1/2 Cup cold butter. Preheat oven to 425°F. Place the entire scottish oatmeal scone mix contents in a large bowl. Use a pastry cutter to cut the butter into the mix until it resembles small peas. Stir in the water to form a soft dough. divide mixture in half. Turn out onto a floured work surface and pat into two 6" discs. Place on a greased baking sheet about 1" apart. Cut each circle into 6 wedges. Bake for 15 minutes or until lightly browned. For a fun variation try adding 2/3 cup of your favorite chopped nuts for a new twist. Store refrigerated in a tightly covered container. Lemon curd: This traditional english topping will add a sweet and tangy zip to your scones. 1 Cup sugar. 1/2 Cup butter. Grated rind and strained juice of 3 lemons, 3 large eggs, beaten. Place ingredients in a heavy saucepan and simmer over low heat until the mixture is thick, but still falls easily from a spoon. Do not boil. Stir frequently to prevent separation. Chill and serve. |
