Pumpkin Streusel Muffins: Makes 36.
Prepare batter as directed.
Combine 3 tablespoons all-purpose flour, 3 tablespoons granulated sugar and 1/2 teaspoon ground cinnamon in small bowl. Stir in 2 tablespoons butter with fork until crumbly. Sprinkle lightly over tops of batter.
Bake as directed below. Drizzle icing over cooled muffins.

Makes - 2 9" x 5" loaves. Bake time - 60 to 65 min.
Makes - 3 8" x 4" loaves. Bake time - 55 to 60 min.
Makes - 6 mini loaves. Bake time - 50 to 55 min.
Makes - 1 13" x 9" pan. Bake time - 45 to 50 min.
Makes - 1 (12-cup) Bundt cake. Bake time - 65 to 70 min.
Makes - 24 large muffins. Bake time - 24 to 30 min.
Makes - 36 standard muffins. Bake time - 21 to 24 min.
Makes - 72 mini muffins. Bake time - 15 to 16 min.
Divide batter evenly Into paper-lined or greased muffin cups or greased pans.
You will add:
4 large eggs.
1 cup water*.
1/2 cup vegetable oil.
*May substitute apple or orange juice for water.
Instructions:
1. Preheat oven to 350 degrees F. Grease pan(s) (see chart on side).
2. Combine eggs, water, oil and Libby's® 100% pure pumpkin in large bowl.
Mix until well blended.
Add bread mix. Stir just until moistened.
Variation: Stir in 1 cup sweetened dried cranberries, chopped nuts, finely chopped apple or raisins with bread mix.
3. Pour batter into prepared pan(s).
Bake as directed or until wooden pick inserted in center comes out clean.
4. Cool in pan(s) on wire rack 10 minutes. Remove to wire rack to cool completely.
Drizzle Icing over cooled bread(s).
High altitude baking (3,500 to 6,000 ft.): Add an additional 1/4 cup water. Bake as directed.
Store in tightly sealed container or resealable plastic bag up to 4 days.
The 15-oz. can of Libby's® 100% pure pumpkin included in this kit contains 1 3/4 cups of pumpkin.
Do not consume raw batter. Not ready to eat.
