Cooking Tips.
To hot cooked rice add:
Sprinkle on Parmesan cheese, chopped fresh spinach and chopped tomatoes for a healthy favorite.
Mix in chopped celery, onion and carrots. Top with crumbled Feta cheese and fat-free Italian dressing for a fast and easy salad.
Add steamed vegetables like carrots, zucchini, and pearl onions. Top with Parmesan cheese thyme for a healthy, tasty side dish.
A combination of cilantro, raisins and orange zest are flavorful additions to hot cooked, buttered rice.
Great meal ideas:
Cooked and cooled white rice provides a wonderful base for fresh chopped tomatoes, fresh basil leaves and lemon vinaigrette. For crispness, add chopped cucumbers.
Simple pilaf - prepare rice in chicken broth instead of water, add sauteed onions, mushrooms, and green peppers. Top with toasted pine nuts.
Chicken seasoned rice - combine 3 cups cooked rice with 2 tablespoons margarine, 1 chicken flavored bouillon cube, crushed, and 1 teaspoon parsley flakes.
Cheesy rice - combine 1/2 cup milk, 1/2 cup shredded cheese, and 1 chicken flavored bouillon cube, crushed. Heat until cheese melts. Stir into 3 cups cooked rice.
Rice ole - Add black beans, minced red onion, chopped bell pepper, chopped cilantro, and vinaigrette to hot, cooked rice.
Mock apple cobbler - Add sliced apples, cinnamon, brown sugar, chopped nuts, and vanilla yogurt to hot, cooked rice.
Cooking directions on the stove:
1. In a saucepan, bring water to a boil.
2. Stir in rice**.
3. Cover. Reduce heat and simmer for 20 minutes or until all water is absorbed.
**Add 1 tbsp. tub margarine and 1 tsp, salt per cup of uncooked rice, if desired.
For drier rice use 1/4 cup less water.
For moister rice, use 1/4 cup more water.
Cooking directions in the microwave***.
1. In a 2 quart microwave-safe dish combine 2 cups water and 1 cup rice**.
2. Cover and microwave on high for 5 minutes. Reduce setting to 50% power, microwave for 15 minutes. Let stand for 5 minutes.
***It is recommended that only 1 cup rice be prepared in the microwave at a time. Microwave ovens vary. Cooking times are approximate.
To retain vitamins, do not rinse before or drain after cooking.
