To fill line on carton. 1. Pour equal amounts of hashbrowns and hot water (140°F - 160°F) into a bowl or fill carton with hot water to fill line. Make sure all hashbrowns are covered with water. Let hashbrowns sit at room temperature for 12 minutes. Drain. For full carton preparation transfer to holding pan after draining until ready for use (refrigerate if not to be used immediately, but use remainder within 24 hours). 2. Grill in a well-oiled skillet on medium-high heat (375°F - 400°F) for 3 to 4 minutes or until golden brown. Grilling is required on one side only. Preparation hints: For extra crispiness, flip hashbrowns and grill; for an additional 3-4 minutes or until desired crispiness. For softer hashbrowns or when water temperature is less than 140°, let stand for 15 minutes in step 1 above. Yield: 8 pounds or 50 1/2 cup servings of ready to grill hashbrowns. Make it your own: Substitute for fresh, refrigerated or frozen hashbrowns in recipes after refreshing with water and draining. Add to an egg scramble, omelet or frittata. Include in a breakfast burrito or burrito bowl. Serve with sauteed onions and green or red bell peppers for O'Brien style. Use as a base for nachos instead of tortilla chips. Include in your favorite pancake or tater tot recipe. Add to your favorite sandwich, wrap or burger. Use as an alternative to fried onion rings as a topping. Substitute as a crust in quiches or pot pies. Use as a coating for fish or meats. Serve as a side dish for dinner instead of mashed potatoes or fried fries. |
